Ingredients
– 1 cup (2 sticks) unsalted butter, softened
– 1 cup granulated sugar
– 2 tablespoons dark rum
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1 1/2 cups sweetened shredded coconut
– Powdered sugar for dusting
Instructions
1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
2. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the rum until well combined.
3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing just until combined. Fold in the shredded coconut.
4. Press the dough evenly into the prepared baking pan. Bake for 25-30 minutes, or until the edges are lightly golden.
5. Remove the pan from the oven and let the squares cool completely in the pan. Once cooled, lift the bars out of the pan using the parchment paper overhang.
6. Cut the squares into 1-inch pieces and generously dust with powdered sugar before serving.
Notes
For a stronger rum flavor, increase the amount of rum to 3-4 tablespoons. These squares can be stored in an airtight container at room temperature for up to 5 days.
