Ingredients

– 2 cups old-fashioned rolled oats

– 1 1/2 cups unsweetened coconut milk

– 1/2 cup unsweetened shredded coconut

– 1/2 cup dried cranberries

– 2 tablespoons honey

– 1/2 teaspoon vanilla extract

– 1/4 teaspoon ground cinnamon

– Pinch of salt


Instructions

1. In a medium bowl, combine the rolled oats, coconut milk, shredded coconut, dried cranberries, honey, vanilla extract, cinnamon, and a pinch of salt. Stir until well combined.

2. Cover the bowl and refrigerate for at least 4 hours, or overnight.

3. When ready to serve, give the overnight oats a quick stir. Top with additional coconut flakes, fresh cranberries, and a drizzle of honey, if desired.

Notes
