Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
– 1 tablespoon olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tablespoon grated fresh ginger
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon turmeric
– 1 (13.5-ounce) can coconut milk
– 2 cups low-sodium chicken broth
– 1 cup long-grain white rice
– 1 lime, juiced
– 2 tablespoons chopped fresh cilantro
– Salt and pepper to taste
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
2. Add the chicken and cook, stirring occasionally, until browned on all sides, about 5 minutes.
3. Add the onion, garlic, ginger, cumin, coriander, and turmeric. Cook, stirring frequently, until the onion is softened, about 3 minutes.
4. Pour in the coconut milk and chicken broth. Bring the mixture to a boil.
5. Stir in the rice, cover, and reduce the heat to low. Simmer until the rice is tender and the liquid is absorbed, about 20 minutes.
6. Remove from heat and stir in the lime juice and cilantro. Season with salt and pepper to taste.
7. Serve the Coconut Chicken Brothy Rice warm, garnished with additional cilantro if desired.
Notes
For a spicier dish, add a pinch of red pepper flakes or a diced jalapeño pepper along with the other spices. You can also use bone-in, skin-on chicken thighs for a richer flavor.
