Ingredients
– 1/2 cup chia seeds
– 1 cup unsweetened almond milk
– 1/4 cup strong brewed coffee or espresso, cooled
– 2 tablespoons unsweetened cocoa powder
– 1/4 cup granulated sugar
– 1 cup mascarpone cheese
– 1/2 cup heavy cream
– 1 teaspoon vanilla extract
Instructions
1. 1. In a medium bowl, whisk together the chia seeds, almond milk, coffee, and cocoa powder until well combined.
2. 2. Cover and refrigerate for at least 30 minutes, or until thickened, stirring occasionally.
3. 3. In a separate bowl, beat the mascarpone, heavy cream, and vanilla until smooth and creamy.
