Ingredients
– 2 tablespoons butter
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken or vegetable broth
– 3 cups peeled and cubed potatoes
– 2 cups diced ham
– 1 cup heavy cream
– 1 teaspoon dried thyme
– Salt and pepper to taste
Instructions
1. – In a large pot, melt the butter over medium heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant.
2. – Pour in the broth and add the potatoes. Bring to a boil, then reduce heat and simmer for 15 minutes or until the potatoes are tender.
3. – Stir in the diced ham and heavy cream. Season with thyme, salt, and pepper.
4. – Simmer for an additional 5 minutes to allow the flavors to meld.
5. – Serve hot, garnished with extra thyme or green onions if desired.
Notes
For a thicker soup, you can mash some of the potatoes against the side of the pot. Leftover ham works great in this recipe. The soup can be stored in the refrigerator for up to 4 days or frozen for longer-term storage.
