Ingredients
– 1 lb ground chicken
– 1 cup diced cucumber
– 1 cup diced tomatoes
– 1/2 cup crumbled feta cheese
– 1/2 cup plain Greek yogurt
– 2 tbsp lemon juice
– 1 tsp dried oregano
– 1/2 tsp garlic powder
– 1/4 tsp salt
– 1/4 tsp black pepper
Instructions
1. – In a large skillet, cook the ground chicken over medium-high heat, breaking it up as it cooks, until no longer pink, about 6-8 minutes.
2. – In a small bowl, mix together the Greek yogurt, lemon juice, oregano, garlic powder, salt, and pepper.
3. – Divide the cooked ground chicken into bowls. Top with diced cucumber, tomatoes, and crumbled feta cheese.
4. – Drizzle the yogurt sauce over the top and serve immediately.
Notes
For added flavor, you can also add sliced Kalamata olives or chopped fresh parsley to the bowls. This recipe can be easily doubled to feed a crowd.
