Description

Churu Chicken Amarillo is a delicious and easy-to-make main dish that’s perfect for busy weeknights. Tender chicken is simmered in a zesty, flavorful sauce for a meal that’s ready in just 30 minutes.


Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 teaspoons ground cumin

– 1 teaspoon paprika

– 1/2 teaspoon cayenne pepper

– 1 cup chicken broth

– 1 (15 oz) can diced tomatoes

– 1 (6 oz) can tomato paste

– 1 tablespoon honey

– Salt and pepper to taste

– Chopped cilantro for garnish


Instructions

1. In a large skillet, heat the olive oil over medium-high heat.

2. Add the chicken and cook for 3-4 minutes, until lightly browned on all sides.

3. Add the onion and garlic to the skillet and cook for 2-3 minutes, until the onion is translucent.

4. Stir in the cumin, paprika, and cayenne pepper. Cook for 1 minute to toast the spices.

5. Pour in the chicken broth, diced tomatoes, and tomato paste. Stir to combine.

6. Drizzle in the honey and season with salt and pepper to taste.

7. Bring the mixture to a simmer and cook for 15-20 minutes, until the sauce has thickened and the chicken is cooked through.

8. Serve the Churu Chicken Amarillo over rice or with a side salad. Garnish with chopped cilantro.

Notes

For a spicier dish, increase the amount of cayenne pepper. You can also add diced bell peppers or mushrooms to the skillet for extra vegetables.
