Ingredients
– 12 ounces white chocolate, chopped
– 1 cup heavy cream
– 1 teaspoon peppermint extract
– 1/4 cup crushed candy canes
Instructions
1. In a medium microwave-safe bowl, melt the white chocolate in the microwave, stirring every 30 seconds, until smooth.
2. In a separate bowl, whip the heavy cream until stiff peaks form.
3. Fold the peppermint extract into the whipped cream.
4. Gently fold the whipped cream mixture into the melted white chocolate until well combined.
5. Using a small cookie scoop or spoon, portion the mixture into small balls and place on a parchment-lined baking sheet.
6. Refrigerate for at least 2 hours, or until firm.
7. Once set, roll the peppermint creams in the crushed candy canes to coat.
8. Serve chilled and enjoy!
Notes
For a firmer texture, you can add 1-2 tablespoons of powdered sugar to the whipped cream mixture. Store the peppermint creams in an airtight container in the refrigerator for up to 1 week.
