Ingredients
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 2 teaspoons vanilla extract
Instructions
1. – In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
2. – In a large bowl, cream the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until well combined.
3. – Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour (or up to 3 days).
4. – Preheat oven to 350°F. Line baking sheets with parchment paper.
5. – Working with one disk at a time, roll the dough out on a lightly floured surface to 1/4-inch thickness. Use cookie cutters to cut out shapes and place them 1 inch apart on the prepared baking sheets.
6. – Bake for 8-10 minutes, until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
7. – Once cooled, decorate the cookies with your favorite icing, sprinkles, or other toppings.
Notes
– Chilling the dough is essential for keeping the cookies from spreading during baking.
– For softer cookies, bake for the lower end of the time range. For crispier cookies, bake for the higher end.
– Store the cookies in an airtight container at room temperature for up to 1 week.
