Indulge in the delightful flavors of these buttery, flaky Christmas Cranberry and Brie Filo Crackers. The combination of creamy brie and tangy cranberries wrapped in crisp filo dough is the perfect holiday treat.
Ingredients
– 12 sheets filo dough
– 8 oz brie cheese, cut into 1-inch cubes
– 1 cup fresh or frozen cranberries
– 1/4 cup unsalted butter, melted
– 2 tbsp granulated sugar
– 1 tsp ground cinnamon
Instructions
1. 1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. 2. In a small bowl, combine the cranberries, sugar, and cinnamon. Mix well and set aside.
3. 3. Lay one sheet of filo dough on a clean work surface. Brush with melted butter. Top with another sheet of filo dough and brush with more butter.
4. 4. Place a cube of brie cheese near the bottom of the filo stack. Top with about 1 tbsp of the cranberry mixture.
5. 5. Fold the bottom of the filo dough over the filling, then fold in the sides and continue rolling up into a tight cylinder.
6. 6. Place the filo cracker seam-side down on the prepared baking sheet. Repeat with remaining filo dough, brie, and cranberry mixture.
7. 7. Bake for 15-18 minutes, or until the filo dough is golden brown and crispy.
8. 8. Let cool for 5 minutes before serving. Enjoy!
Notes
For best results, work with the filo dough in batches, keeping the unused sheets covered with a damp towel to prevent drying. The cranberry mixture can be made a day in advance and refrigerated until ready to assemble. These crackers are delicious served warm or at room temperature.
