Ingredients
– 1 cup unsalted butter
– 1 cup granulated sugar
– 1/4 cup light corn syrup
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 24 saltine crackers
Instructions
1. – Line a baking sheet with parchment paper.
2. – In a medium saucepan, melt the butter over medium heat. Add the sugar and corn syrup, stirring constantly until the mixture comes to a boil.
3. – Continue cooking, stirring frequently, until the mixture reaches 300°F on a candy thermometer, about 5-7 minutes.
4. – Remove from heat and stir in the vanilla and salt.
5. – Arrange the saltine crackers in a single layer on the prepared baking sheet. Pour the hot toffee mixture evenly over the crackers.
6. – Bake at 350°F for 5 minutes.
7. – Remove from oven and allow to cool completely before breaking into pieces.
Notes
For a festive touch, you can sprinkle the toffee with crushed candy canes or drizzle with melted chocolate before it cools. Store the toffee in an airtight container at room temperature for up to 2 weeks.
