Ingredients
– 1 whole fresh fish (such as sea bass or tilapia), scaled and gutted
– 2 tablespoons soy sauce
– 1 tablespoon rice vinegar
– 1 teaspoon sesame oil
– 2 cloves garlic, minced
– 1 thumb-sized piece of ginger, peeled and sliced
– 3 scallions, chopped
– 2 tablespoons chopped cilantro
– Salt and pepper to taste
Instructions
1. Rinse the whole fish under cold water and pat dry with paper towels. Score the skin with a few diagonal cuts on both sides.
2. In a small bowl, mix together the soy sauce, rice vinegar, and sesame oil. Rub this mixture all over the fish, including the inside cavity.
3. Stuff the cavity of the fish with the minced garlic, sliced ginger, and half of the chopped scallions and cilantro.
4. Set up a steamer basket in a large pot with 1-2 inches of water. Bring the water to a boil.
5. Carefully place the seasoned fish in the steamer basket. Cover and steam for 15-20 minutes, or until the fish flakes easily with a fork.
6. Transfer the steamed fish to a serving platter. Garnish with the remaining chopped scallions and cilantro.
7. Serve the Chinese Steamed Whole Fish immediately, with steamed rice and stir-fried vegetables on the side.
Notes
– For a richer flavor, you can add a tablespoon of Shaoxing wine or mirin to the soy sauce mixture.
– Experiment with different types of whole fish, such as snapper, grouper, or branzino.
– Leftovers can be flaked and used in fried rice, soups, or salads.
