Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 1 cup uncooked white rice
– 1 cup plain Greek yogurt
– 1 cucumber, grated
– 2 cloves garlic, minced
– 1 tbsp fresh dill, chopped
– 1 tbsp fresh parsley, chopped
– 1 tsp lemon juice
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. Preheat oven to 375°F.
2. 2. In a large bowl, mix together the Greek yogurt, grated cucumber, garlic, dill, parsley, lemon juice, salt, and pepper to make the tzatziki sauce. Set aside.
3. 3. Place the cubed chicken in a baking dish and pour the tzatziki sauce over the top, making sure the chicken is evenly coated.
4. 4. Bake for 25-30 minutes, or until the chicken is cooked through and the sauce is bubbly.
5. 5. Meanwhile, cook the rice according to package instructions.

Notes
