Description
Chicken Scarpariello is a classic Italian-American dish that features tender, juicy chicken pieces simmered in a flavorful sauce with garlic, lemon, and spices. This easy version is perfect for a weeknight dinner, with the dish coming together in just 30 minutes.
Ingredients
– 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– 1 lemon, zested and juiced
– 1/2 cup dry white wine
– 1 cup chicken broth
– 2 tablespoons capers, drained
– 1 teaspoon dried oregano
– 1/4 teaspoon red pepper flakes (optional)
– Salt and black pepper to taste
– Chopped parsley for garnish
Instructions
1. Season the chicken with salt and pepper.
2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. Reduce the heat to medium and add the garlic to the skillet. Cook for 1 minute, stirring constantly, until fragrant.
4. Pour in the white wine and use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Let the wine simmer for 2-3 minutes.
5. Add the chicken broth, lemon zest and juice, capers, oregano, and red pepper flakes (if using). Bring the mixture to a simmer.
6. Return the chicken to the skillet and let the dish simmer for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
7. Taste and adjust seasoning with salt and pepper as needed.
8. Garnish with chopped parsley before serving.
Notes
This dish can be served over pasta, rice, or with crusty bread to soak up the delicious sauce. For a heartier meal, roast some potatoes or vegetables to serve alongside the Chicken Scarpariello.
