Ingredients
– 1 tablespoon olive oil
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 3 garlic cloves, minced
– 6 cups chicken broth
– 2 boneless, skinless chicken breasts
– 8 oz egg noodles
– 2 tablespoons fresh parsley, chopped
– Salt and pepper to taste
Instructions
1. – In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté for 5-7 minutes until vegetables are softened.
2. – Add the garlic and cook for 1 minute until fragrant.
3. – Pour in the chicken broth and add the chicken breasts. Bring to a boil, then reduce heat and simmer for 15-20 minutes until chicken is cooked through.
4. – Remove the chicken breasts from the pot and shred or dice them.
5. – Add the shredded chicken and egg noodles to the pot. Cook for 8-10 minutes until noodles are tender.
6. – Stir in the chopped parsley and season with salt and pepper to taste.

Notes
For a thicker soup, you can use wide egg noodles. To make this recipe gluten-free, use gluten-free noodles. Store leftovers in an airtight container in the refrigerator for up to 4 days.
