These Chicken Kabobs are the ultimate summer grilling recipe! Juicy, tender chicken is marinated in a flavorful blend of herbs, spices, and citrus, then threaded onto skewers along with crisp vegetables for an easy, crowd-pleasing main dish.
Ingredients
– 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
– 2 bell peppers, cut into 1-inch pieces
– 1 red onion, cut into 1-inch pieces
– 1/4 cup olive oil
– 3 tablespoons lemon juice
– 2 garlic cloves, minced
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1/2 teaspoon smoked paprika
– 1/4 teaspoon crushed red pepper flakes
– Salt and black pepper to taste
Instructions
1. In a large resealable bag or shallow dish, combine the chicken, bell peppers, and onion.
2. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, basil, paprika, and red pepper flakes. Season with salt and pepper.
3. Pour the marinade over the chicken and vegetables, tossing to coat everything evenly. Cover or seal and refrigerate for at least 30 minutes, up to 4 hours.
4. Preheat grill to medium-high heat. Thread the marinated chicken and vegetables onto metal or wooden skewers.
5. Grill the kabobs for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
