Ingredients
– 1 pound boneless, skinless chicken breasts
– 8 cups chicken broth
– 1 cup uncooked long-grain rice
– 2 tablespoons freshly grated ginger
– 2 scallions, thinly sliced
– 1 teaspoon salt
– 1/2 teaspoon white pepper
– 2 tablespoons sesame oil
Instructions
1. In a large pot, bring the chicken broth to a boil over high heat.
2. Add the uncooked rice and reduce the heat to medium-low. Simmer, stirring occasionally, for 20-25 minutes, until the rice has softened and the congee has thickened.
3. Add the chicken breasts to the pot and continue simmering for 10-15 minutes, until the chicken is cooked through.
4. Remove the chicken from the pot and shred it into bite-sized pieces using two forks.
5. Return the shredded chicken to the pot and stir in the grated ginger, salt, and white pepper.
6. Serve the Chicken Congee hot, garnished with sliced scallions and a drizzle of sesame oil.
Notes
For a creamier texture, you can blend a portion of the congee before adding the shredded chicken. You can also adjust the consistency by adding more broth if the congee becomes too thick. This dish is best enjoyed immediately, but leftovers can be stored in the refrigerator for up to 3 days.
