Ingredients

– 2 cups all-purpose flour

– 1 teaspoon salt

– 1 teaspoon sugar

– 1 packet active dry yeast (about 2 1/4 teaspoons)

– 3/4 cup warm water

– 2 tablespoons olive oil, plus more for greasing

– 1 (28-ounce) can crushed tomatoes

– 2 cloves garlic, minced

– 1 teaspoon dried oregano

– 1/2 teaspoon red pepper flakes

– 8 ounces shredded mozzarella cheese

– 2 ounces grated Parmesan cheese


Instructions

1. In a large bowl, combine the flour, salt, sugar, and yeast. Add the warm water and 2 tablespoons of olive oil, and stir until a shaggy dough forms.

2. Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic. Place the dough in a lightly greased bowl, cover, and let rise for 1 hour.

3. In a medium bowl, mix together the crushed tomatoes, garlic, oregano, and red pepper flakes.

4. Grease a 10-inch cast iron skillet with olive oil. Roll out the dough to fit the skillet, pressing it up the sides to create a deep-dish crust.

5. Sprinkle the mozzarella and Parmesan cheeses over the dough, then pour the tomato sauce mixture over the top.

6. Bake at 400°F for 25-30 minutes, until the crust is golden brown and the cheese is melted and bubbly.

7. Let the pizza cool for 5 minutes before slicing and serving.

Notes

For best results, use a high-quality canned crushed tomatoes. You can also add your favorite toppings, such as pepperoni, sausage, or vegetables, before baking.
