Ingredients

– 1 lb pork tenderloin, cut into 1-inch cubes

– 2 tbsp olive oil

– 1 tsp chili powder

– 1 tsp cumin

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1/2 cup cherry preserves

– 2 tbsp apple cider vinegar

– 8-10 small corn tortillas, warmed

– Toppings: shredded cabbage, diced avocado, chopped cilantro, lime wedges


Instructions

1. – In a large skillet, heat the olive oil over medium-high heat.

2. – Add the pork cubes, chili powder, cumin, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until pork is browned on all sides.

3. – In a small bowl, whisk together the cherry preserves and apple cider vinegar. Pour the mixture into the skillet with the pork and stir to coat.

4. – Reduce heat to low and let the pork simmer for 5 more minutes, until the sauce has thickened slightly.

5. – Serve the cherry glazed pork in the warm corn tortillas, topped with shredded cabbage, diced avocado, chopped cilantro, and a squeeze of lime juice.

Notes

For a spicier version, add a pinch of cayenne pepper to the pork seasoning. The cherry glaze can also be used on grilled or roasted pork tenderloin.
