Indulge in the rich and creamy Cherry Amaretto Tiramisu, a delectable twist on the classic Italian dessert. Layers of coffee-soaked ladyfingers, sweet mascarpone, and juicy cherries infused with the distinctive flavor of amaretto liqueur come together to create a truly mouthwatering treat.
Ingredients
– 1 cup brewed coffee, cooled
– 1/4 cup amaretto liqueur
– 24 ladyfingers
– 16 oz mascarpone cheese
– 3/4 cup granulated sugar
– 3 large eggs, separated
– 1 cup fresh cherries, pitted and halved
– 2 tbsp unsweetened cocoa powder
Instructions
1. 1. In a shallow bowl, combine the cooled coffee and amaretto liqueur.
2. 2. Quickly dip the ladyfingers into the coffee mixture, making sure to coat both sides.
3. 3. In a large bowl, beat the mascarpone and 1/2 cup of the sugar until smooth and creamy.
4. 4. In a separate bowl, beat the egg yolks and remaining 1/4 cup of sugar until light and fluffy.
5. 5. Gently fold the egg yolk mixture into the mascarpone mixture.
6. 6. In a clean bowl, beat the egg whites until stiff peaks form.
7. 7. Fold the whipped egg whites into the mascarpone mixture.
8. 8. Arrange a layer of soaked ladyfingers in the bottom of an 8×8 inch baking dish.
9. 9. Spread half of the mascarpone mixture over the ladyfingers, then top with half of the cherries.
10. 10. Repeat the layers, ending with the mascarpone mixture.
11. 11. Dust the top with the cocoa powder.
12. 12. Refrigerate for at least 4 hours, or overnight, before serving.
Notes
For a more intense cherry flavor, you can use cherry liqueur instead of amaretto. You can also use frozen cherries in place of fresh, if desired. This dessert can be made a day in advance and stored in the refrigerator until ready to serve.
