Description

Indulge in the ultimate comfort dish with these Cheesy Stuffed Potatoes With Spinach & Mushrooms. Baked potatoes are filled with a creamy, cheesy blend of melted cheese, fresh spinach, and sautéed mushrooms for a satisfying and flavorful meal.


Ingredients

– 4 medium russet potatoes

– 1 tablespoon olive oil

– 8 oz cremini mushrooms, sliced

– 2 cups fresh spinach, chopped

– 1/2 cup shredded cheddar cheese

– 1/2 cup shredded mozzarella cheese

– 2 tablespoons butter

– 1/4 cup milk

– 1 teaspoon garlic powder

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. – Preheat oven to 400°F. Bake the potatoes for 50-60 minutes, until tender when pierced with a fork.

2. – In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, until lightly browned.

3. – Add the chopped spinach to the skillet and sauté for 2-3 minutes, until wilted. Remove from heat and set aside.

4. – Once the potatoes are done baking, let them cool for 5 minutes. Cut each potato in half lengthwise and scoop out the flesh into a bowl, leaving a thin layer of potato inside the skins.

5. – In the bowl with the potato flesh, add the butter, milk, garlic powder, salt, and black pepper. Mash and stir until smooth and creamy.

6. – Stir in the sautéed mushrooms and spinach, along with the shredded cheddar and mozzarella cheeses.

7. – Spoon the cheesy potato mixture back into the potato skins, dividing it evenly.

8. – Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

9. – Serve hot and enjoy!

Notes

For a crunchy topping, sprinkle the stuffed potatoes with panko breadcrumbs before baking. You can also add diced cooked bacon or chopped green onions as garnishes.
