Description

These Cheesy Pulled Pork Taquitos are a delicious and easy-to-make appetizer or main dish. Tender pulled pork is wrapped in crispy tortillas and baked to perfection, then drizzled with a creamy chipotle ranch dressing for an irresistible flavor combination.


Ingredients

– 2 cups shredded pulled pork

– 1 cup shredded cheddar cheese

– 12 small corn or flour tortillas

– 1/2 cup chipotle ranch dressing

– 1 tablespoon chopped fresh cilantro

– 1 lime, cut into wedges


Instructions

1. 1. Preheat oven to 375°F (190°C).

2. 2. In a medium bowl, mix together the shredded pulled pork and cheddar cheese.

3. 3. Place a tortilla on a flat surface and spoon 2-3 tablespoons of the pulled pork mixture onto the center. Roll the tortilla tightly around the filling.

4. 4. Place the rolled taquito seam-side down on a baking sheet. Repeat with the remaining tortillas and filling.

5. 5. Bake for 15-20 minutes, or until the taquitos are crispy and golden brown.

6. 6. Remove from the oven and drizzle with the chipotle ranch dressing.

7. 7. Garnish with chopped fresh cilantro and serve with lime wedges.

Notes

For extra crispiness, you can lightly spray or brush the taquitos with oil before baking. The chipotle ranch dressing can also be used as a dipping sauce on the side.
