Description
These Cheesy Mashed Potato Puff Bites are the ultimate party appetizer – bite-sized, creamy, and bursting with flavor.
Ingredients
– 2 cups mashed potatoes (leftover or freshly made)
– 1 cup shredded cheddar cheese
– 2 tablespoons cream cheese
– 2 eggs, beaten
– 2 tablespoons chopped chives
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
Instructions
1. – Preheat oven to 400°F.
2. – In a large bowl, mix together the mashed potatoes, cheddar cheese, cream cheese, beaten eggs, chives, salt, and pepper until well combined.
3. – Grease a mini muffin tin and scoop the potato mixture into the cups, filling them about 3/4 full.
4. – Bake for 15-18 minutes, until the tops are lightly golden.
5. – Remove from oven and let cool for 5 minutes before gently removing the puff bites from the tin.
6. – Serve warm and enjoy!
Notes
For extra cheesy flavor, add an extra 1/4 cup of shredded cheddar on top before baking. These puff bites can also be made ahead and reheated before serving.
