Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups beef broth

– 2 cups diced potatoes

– 1 cup diced carrots

– 1 cup diced celery

– 2 cups milk

– 2 cups shredded cheddar cheese

– 2 tbsp Worcestershire sauce

– 1 tsp dried thyme

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled.

2. – Add the onion and garlic and cook for 2-3 minutes until fragrant.

3. – Pour in the beef broth and add the potatoes, carrots, and celery. Bring to a boil.

4. – Reduce heat and simmer for 15-20 minutes until vegetables are tender.

5. – Stir in the milk, cheddar cheese, Worcestershire sauce, and thyme. Season with salt and pepper.

6. – Cook for 5 more minutes, stirring occasionally, until cheese is melted and soup is heated through.

7. – Serve hot, garnished with extra cheese if desired.

Notes

This soup is best served with crusty bread or crackers. For a thicker consistency, you can mash some of the potatoes against the side of the pot. Leftovers reheat well for easy lunches.
