Description

Ingredients

– 3 lbs Yukon Gold potatoes, peeled and diced

– 1 onion, diced

– 4 garlic cloves, minced

– 4 cups chicken or vegetable broth

– 2 cups heavy cream

– 2 cups shredded sharp cheddar cheese

– 1 tbsp dried thyme

– 1 tbsp dried parsley

– 1 tsp salt

– 1/2 tsp black pepper


Instructions

1. – In a large pot, combine the diced potatoes, onion, garlic, and broth. Bring to a boil over high heat.

2. – Reduce heat to medium-low and simmer for 15-20 minutes, until the potatoes are fork-tender.

3. – Using a potato masher or immersion blender, roughly mash about half of the potatoes, leaving the rest in chunks.

4. – Stir in the heavy cream, cheddar cheese, thyme, parsley, salt, and pepper. Cook for 5 more minutes, stirring occasionally, until the cheese is melted and the soup is heated through.

5. – Serve hot, garnished with additional cheddar cheese, herbs, or crispy bacon if desired.

Notes

For a thicker soup, let it simmer for a few extra minutes. You can also add diced cooked bacon or croutons as a topping. Leftovers will keep in the refrigerator for up to 4 days.
