Description

Ingredients

– 2 tablespoons butter

– 1 onion, diced

– 2 cloves garlic, minced

– 1 pound mixed seafood (shrimp, scallops, white fish)

– 2 tablespoons all-purpose flour

– 1 cup milk

– 1 cup seafood or chicken broth

– 1 teaspoon dried thyme

– Salt and pepper to taste

– 1 (16 oz) can refrigerated Cheddar Bay biscuit dough


Instructions

1. – Preheat oven to 400°F.

2. – In a large skillet, melt the butter over medium heat. Add the onion and garlic and cook for 2-3 minutes until fragrant.

3. – Add the seafood and cook for 2-3 minutes until partially cooked.

4. – Sprinkle the flour over the seafood mixture and stir to coat. Gradually pour in the milk and broth, stirring constantly until the mixture thickens, about 2-3 minutes.

5. – Remove from heat and season with thyme, salt, and pepper.

6. – Arrange the Cheddar Bay biscuit dough over the top of the seafood mixture, spacing them evenly.

7. – Bake for 15-18 minutes until the biscuits are golden brown.

8. – Serve hot and enjoy!

Notes

For extra flavor, you can add some Old Bay seasoning or lemon juice to the seafood mixture. Leftover pot pie can be stored in the refrigerator for up to 3 days.
