Ingredients
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, chilled and cubed
– 3-4 tablespoons ice water
– 3 ripe pears, peeled, cored, and sliced
– 1/2 cup granulated sugar
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground cardamom
– 1/4 teaspoon ground ginger
– 1/4 teaspoon ground cloves
Instructions
1. 1. Preheat oven to 375°F (190°C).
2. 2. In a food processor, pulse the flour and salt together. Add the chilled butter and pulse until the mixture resembles coarse crumbs.
3. 3. Add the ice water 1 tablespoon at a time, pulsing until the dough just begins to come together.
4. 4. Transfer the dough to a lightly floured surface and gently shape into a disc. Wrap in plastic wrap and refrigerate for 30 minutes.
5. 5. In a medium bowl, toss the sliced pears with the sugar, cinnamon, cardamom, ginger, and cloves.
6. 6. Roll out the chilled dough into a 12-inch circle and transfer to a 9-inch tart pan with a removable bottom.
7. 7. Arrange the spiced pear slices in the tart shell.
8. 8. Bake for 30-35 minutes, or until the crust is golden brown and the pears are tender.
9. 9. Allow the tart to cool for at least 15 minutes before slicing and serving.
Notes
For a richer flavor, use a combination of Bartlett and Bosc pears. Serve the Chai Pear Tart warm, with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
