Ingredients

– 2 ripe pears, sliced

– 2 tbsp brown sugar

– 1 tbsp unsalted butter

– 1 baguette, sliced into 1/2-inch thick rounds

– 4 oz goat cheese, softened

– 2 tbsp fresh rosemary, chopped


Instructions

1. 1. In a skillet over medium heat, melt the butter. Add the pear slices and brown sugar. Cook, stirring occasionally, until the pears are caramelized and softened, about 8-10 minutes.

2. 2. Toast the baguette slices in a toaster oven or under the broiler until lightly golden brown.

3. 3. Spread a layer of goat cheese on each toasted baguette slice. Top with a caramelized pear slice and a sprinkle of fresh chopped rosemary.

4. 4. Serve the Caramelized Pear & Goat Cheese Crostini with Rosemary immediately while the pears are still warm.

Notes

For best results, use ripe but still firm pears. Adjust the amount of brown sugar to your desired level of sweetness. The crostini can also be made ahead of time and assembled just before serving.
