Ingredients

– 1 sheet of puff pastry, thawed

– 2 large onions, thinly sliced

– 2 tablespoons olive oil

– 2 cloves garlic, minced

– 1 teaspoon fresh thyme, chopped

– 4 ounces goat cheese, crumbled

– Salt and pepper to taste


Instructions

1. – Preheat your oven to 400°F (200°C).

2. – In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.

3. – Add the minced garlic and fresh thyme to the caramelized onions and cook for an additional 2-3 minutes, until fragrant.

4. – Unroll the puff pastry sheet and cut it into 6 equal squares. Gently press each square into a greased muffin tin, creating a tart shell.

5. – Spoon the caramelized onion mixture evenly into the tart shells, then top with the crumbled goat cheese.

6. – Bake the tarts for 18-20 minutes, or until the pastry is golden brown and the cheese is melted.

7. – Remove the tarts from the oven and let them cool for a few minutes before serving.

Notes
