Description

Ingredients

– 8 oz. pasta (such as penne or fusilli)

– 2 tbsp. butter

– 3 leeks, thinly sliced

– 8 oz. cremini mushrooms, sliced

– 2 cloves garlic, minced

– 1/2 cup heavy cream

– 1 cup shredded gruyere cheese

– 1/4 cup grated parmesan cheese

– 1 tsp. fresh thyme leaves

– Salt and pepper to taste


Instructions

1. 1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. 2. In a large skillet, melt the butter over medium heat. Add the sliced leeks and cook for 8-10 minutes, stirring frequently, until caramelized and softened.

3. 3. Add the sliced mushrooms and garlic to the skillet. Cook for an additional 5-7 minutes, until the mushrooms are tender and the garlic is fragrant.

4. 4. Reduce heat to low and stir in the heavy cream. Simmer for 2-3 minutes, until the sauce starts to thicken.

5. 5. Add the cooked pasta, gruyere cheese, and parmesan cheese to the skillet. Toss to combine and heat through, about 2-3 minutes, until the cheese is melted and the sauce is creamy.

6. 6. Remove from heat and stir in the fresh thyme. Season with salt and pepper to taste.

7. 7. Serve the Caramelized Leek and Mushroom Gruyere Pasta immediately, garnished with additional thyme if desired.

Notes

This dish can be made ahead of time and reheated. The caramelized leeks and creamy cheese sauce can also be used as a topping for other pasta dishes or roasted vegetables.
