Ingredients
– 16 oz cream cheese, softened
– 1 cup granulated sugar
– 2 eggs
– 1 tsp vanilla extract
– 2 ripe bananas, mashed
– 1 graham cracker crust
for the rum glaze:
– 1/2 cup brown sugar
– 1/4 cup rum
– 2 tbsp unsalted butter
Instructions
1. 1. Preheat oven to 325°F.
2. 2. In a large bowl, beat the cream cheese until smooth. Gradually add in the sugar and beat until well combined.
3. 3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla and mashed bananas until fully incorporated.
4. 4. Pour the cheesecake batter into the graham cracker crust and bake for 40-45 minutes, until the center is almost set.
5. 5. Allow the cheesecake to cool completely, then refrigerate for at least 2 hours.
6. 6. In a small saucepan, combine the brown sugar, rum, and butter. Cook over medium heat, stirring frequently, until the sauce thickens, about 5 minutes.

Notes
For best results, use ripe, spotty bananas for maximum flavor. The rum glaze can be made in advance and stored in the refrigerator until ready to use.
