Ingredients
– 2 cups all-purpose flour
– 1/4 cup granulated sugar
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, chilled and cubed
– 1 egg, beaten
– 2-3 tablespoons cold water
– 1 cup ricotta cheese
– 1/2 cup powdered sugar
– 1 teaspoon vanilla extract
– 1/4 cup mini chocolate chips (optional)
Instructions
1. – Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. – In a large bowl, combine the flour, granulated sugar, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
3. – Add the beaten egg and 2-3 tablespoons of cold water, mixing just until the dough comes together. Avoid overmixing.
4. – Roll the dough out on a lightly floured surface to a 1/4-inch thickness. Cut into 2-inch squares and transfer to the prepared baking sheet.
5. – In a medium bowl, mix together the ricotta cheese, powdered sugar, and vanilla extract until well combined.
6. – Place a heaping teaspoon of the ricotta filling in the center of each dough square.
7. – Bake for 18-20 minutes, or until the crust is golden brown.
8. – Allow the Cannoli Squares to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
9. – Optionally, sprinkle with additional powdered sugar or top with mini chocolate chips before serving.
Notes
For a richer filling, you can add a pinch of cinnamon or a tablespoon of orange zest. These Cannoli Squares can be stored in an airtight container at room temperature for up to 3 days.
