Description
This Cajun White Chicken Chili is a creamy, flavor-packed comfort food favorite that’s ready in just 30 minutes. Tender chicken, spices, and a rich, creamy broth make this an irresistible weeknight meal.
Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 1 onion, diced
– 3 cloves garlic, minced
– 1 jalapeño, seeded and diced
– 2 tbsp Cajun seasoning
– 1 tsp ground cumin
– 1 tsp dried oregano
– 1 (15oz) can white beans, drained and rinsed
– 1 (15oz) can black beans, drained and rinsed
– 4 cups chicken broth
– 1 cup heavy cream
– Salt and pepper to taste
– Chopped cilantro for garnish
Instructions
1. – In a large pot or Dutch oven, sauté the chicken over medium-high heat until lightly browned, 5-7 minutes. Remove chicken and set aside.
2. – Add the onion, garlic, and jalapeño to the pot. Sauté for 3-4 minutes until softened.
3. – Stir in the Cajun seasoning, cumin, and oregano. Cook for 1 minute.
4. – Add the white beans, black beans, chicken broth, and heavy cream. Bring to a simmer.
5. – Return the chicken to the pot and let simmer for 15-20 minutes, until chicken is cooked through and chili has thickened.
6. – Season with salt and pepper to taste. Garnish with chopped cilantro.
Notes
For extra heat, add more jalapeño or use a spicier Cajun seasoning. You can also substitute half-and-half or milk for a lighter version.
