Description
These Cajun Bacon Cheeseburger Potato Skin Bombs are loaded twice-baked potatoes with a spicy kick! Crispy potato skins stuffed with a creamy, cheesy Cajun-seasoned ground beef and bacon mixture.
Ingredients
– 6 medium russet potatoes
– 8 slices bacon, cooked until crispy and crumbled
– 1 lb ground beef
– 1 tbsp Cajun seasoning
– 1 cup shredded cheddar cheese
– 1/2 cup sour cream
– 2 green onions, sliced
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F. Bake the potatoes for 1 hour, until tender. Allow to cool slightly.
2. – Cut the potatoes in half lengthwise and scoop out the flesh, leaving a 1/4-inch shell.
3. – In a skillet over medium-high heat, cook the ground beef with the Cajun seasoning until browned and cooked through.
4. – In a bowl, mash the potato flesh with the sour cream, 1/2 cup of the cheddar cheese, and salt and pepper.
5. – Spoon the beef mixture into the potato shells, then top with the remaining 1/2 cup cheddar cheese.
6. – Bake for 15-20 minutes, until heated through and cheese is melted.
7. – Top with crumbled bacon and green onions before serving.
Notes
For extra spice, add a diced jalapeño to the beef mixture. Leftovers can be reheated in the oven at 375°F for 10-15 minutes.
