Ingredients

– 1 medium head of cabbage, shredded

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 4 cloves garlic, minced

– 32 oz vegetable or chicken broth

– 1 (15 oz) can diced tomatoes

– 2 bay leaves

– 1 tsp dried thyme

– 1 tsp dried oregano

– Salt and pepper to taste


Instructions

1. 1. In a large pot or Dutch oven, sauté the onion, carrots, and celery in a bit of olive oil over medium heat until softened, about 5-7 minutes.

2. 2. Add the garlic and cook for 1 minute until fragrant.

3. 3. Add the shredded cabbage, broth, diced tomatoes, bay leaves, thyme, oregano, salt, and pepper. Stir to combine.

4. 4. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the cabbage is tender.

5. 5. Remove the bay leaves before serving.

Notes

For a heartier meal, you can add cooked ground beef or Italian sausage. This soup also freezes well for easy meal prep.
