Ingredients
– 2 cups all-purpose flour
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 cup apricot preserves
– 1 cup shelled and chopped pistachios
Instructions
1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan.
2. In a large bowl, beat the softened butter and sugar until light and fluffy.
3. Gradually add the flour and mix until a dough forms.
4. Press the dough evenly into the prepared baking pan.
5. Spread the apricot preserves over the dough, leaving a 1/2-inch border.
6. Sprinkle the chopped pistachios evenly over the preserves.
7. Bake for 30-35 minutes, or until the crust is golden brown.
8. Allow the squares to cool completely in the pan before cutting into 16 pieces.
Notes
For a prettier presentation, you can dust the top with powdered sugar before serving. These squares can be stored in an airtight container at room temperature for up to 5 days.
