Ingredients

– 1 pound lump crab meat

– 2 tablespoons unsalted butter

– 1 large onion, diced

– 2 celery stalks, diced

– 3 cloves garlic, minced

– 2 tablespoons all-purpose flour

– 4 cups seafood or chicken broth

– 1 cup heavy cream

– 1 bay leaf

– 1 teaspoon paprika

– 1/2 teaspoon cayenne pepper

– Salt and black pepper to taste

– Chopped parsley for garnish

Instructions

1. In a large pot or Dutch oven, melt the butter over medium heat.

2. Add the diced onion and celery, and sauté for 5-7 minutes until softened.

3. Stir in the minced garlic and cook for 1 minute until fragrant.

4. Sprinkle the flour over the vegetables and stir to coat. Cook for 2 minutes, stirring constantly.

5. Gradually whisk in the broth, making sure to scrape up any browned bits from the bottom of the pot.

6. Stir in the heavy cream, bay leaf, paprika, and cayenne pepper. Bring the stew to a simmer and let it cook for 15-20 minutes, stirring occasionally, until slightly thickened.

7. Gently fold in the lump crab meat and season with salt and black pepper to taste.

8. Serve the Bubba’s Crab Stew hot, garnished with chopped parsley. Enjoy with crusty bread.

Notes

For a thicker stew, you can let it simmer for a bit longer. You can also add a splash of sherry or white wine for extra flavor. Adjust the spices to your desired level of heat.
