Ingredients
– 1 cup unsalted butter, softened
– 1 cup packed brown sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 3/4 cups all-purpose flour
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– 1 package of pop tart filling (any flavor)
Instructions
1. – Preheat oven to 350°F. Line a baking sheet with parchment paper.
2. – In a large bowl, cream together the butter and brown sugar until light and fluffy.
3. – Beat in the egg and vanilla extract.
4. – In a separate bowl, whisk together the flour, baking soda, and salt.
5. – Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. – Scoop dough by the tablespoonful and place on the prepared baking sheet, spacing them about 2 inches apart.
7. – Press a small amount of pop tart filling into the center of each cookie dough ball.
8. – Bake for 8-10 minutes, or until the edges are lightly golden.
9. – Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a crisper cookie, bake for an additional 2-3 minutes. Experiment with different pop tart flavors for a variety of cookie options.
