Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 cup brown sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 cup brown sugar, for filling
Instructions
1. – Preheat oven to 375°F and line a baking sheet with parchment paper.
2. – In a medium bowl, whisk together the flour, baking powder, and salt.
3. – In a large bowl, cream the butter and brown sugar until light and fluffy, about 2-3 minutes.
4. – Beat in the egg and vanilla extract until well combined.
5. – Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. – On a lightly floured surface, roll the dough out to 1/4-inch thickness.
7. – Cut out rectangles using a sharp knife or cookie cutter.
8. – Scoop 1-2 tablespoons of brown sugar onto the center of half the rectangles.
9. – Top with the remaining rectangles and press the edges to seal.
10. – Transfer the filled cookies to the prepared baking sheet.
11. – Bake for 12-15 minutes, or until the edges are lightly golden.
12. – Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a crispier texture, bake the cookies for an additional 2-3 minutes. You can also drizzle the cooled cookies with a simple glaze made from powdered sugar and milk.
