Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 2 cups broccoli florets
– 1 cup cooked white rice
– 1 can cream of chicken soup
– 1 cup cheddar cheese, shredded
– 1/2 cup milk
– 1 tsp garlic powder
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. – Preheat oven to 375°F.
2. – In a large bowl, combine the cubed chicken, broccoli florets, cooked rice, cream of chicken soup, 1/2 cup of the cheddar cheese, milk, garlic powder, salt, and pepper. Mix well.
3. – Transfer the mixture to a 9×13 inch baking dish and spread evenly.
4. – Top with the remaining 1/2 cup of cheddar cheese.
5. – Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
6. – Let stand for 5 minutes before serving.
Notes
For a crunchier topping, you can sprinkle breadcrumbs or crushed crackers over the cheese before baking. Leftovers can be stored in the refrigerator for up to 4 days.
