Ingredients

– 3 large russet potatoes, cut into 1/2-inch thick fries

– 4 large eggs

– 1/2 cup unsalted butter, softened

– 2 egg yolks

– 2 tablespoons lemon juice

– 1/4 teaspoon salt

– 1/8 teaspoon white pepper

– 1 cup shredded cheddar cheese


Instructions

1. 1. Preheat oven to 400°F. Spread the fries on a large baking sheet and bake for 25-30 minutes, flipping halfway, until golden brown and crispy.

2. 2. While the fries are baking, prepare the Hollandaise sauce. In a double boiler or heatproof bowl set over a pot of simmering water, whisk together the egg yolks, lemon juice, salt, and white pepper until thickened, about 5-7 minutes.

3. 3. Remove the bowl from the heat and slowly whisk in the softened butter, a little at a time, until the sauce is smooth and creamy. Keep the sauce warm.
