Ingredients
– 2 cups shredded hash browns
– 2 eggs, beaten
– 1/2 cup shredded cheddar cheese
– 4 slices cooked bacon, crumbled
– 2 tablespoons chopped fresh chives
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a medium bowl, combine the shredded hash browns, beaten eggs, 1/4 cup of the cheddar cheese, and the salt and pepper. Mix well.
3. Spread the hash brown mixture onto a greased baking sheet, forming a circular crust about 1/2 inch thick.
4. Bake the hash brown crust for 15-20 minutes, or until it is golden brown and crispy.
5. Remove the crust from the oven and top it with the remaining 1/4 cup of cheddar cheese, the crumbled bacon, and the chopped chives.
