Description

Bok Choy Fried Rice is a quick, flavorful dish that’s perfect for a busy weeknight. This recipe comes together in just 20 minutes and is loaded with fresh vegetables, savory seasonings, and fluffy rice.

Ingredients

– 2 cups cooked white rice

– 2 tablespoons sesame oil

– 3 cloves garlic, minced

– 1 inch ginger, grated

– 1 head bok choy, chopped

– 2 carrots, julienned

– 2 green onions, sliced

– 2 tablespoons soy sauce

– 1 tablespoon rice vinegar

– 1 teaspoon sesame seeds

– Salt and pepper to taste

Instructions

1. Heat the sesame oil in a large skillet or wok over medium-high heat.

2. Add the garlic and ginger and sauté for 1 minute until fragrant.

3. Add the chopped bok choy and carrots. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.

4. Add the cooked rice, soy sauce, and rice vinegar. Toss to combine and heat through, about 2 minutes.

5. Remove from heat and stir in the sliced green onions and sesame seeds.

6. Season with salt and pepper to taste.

7. Serve hot and enjoy!

Notes

This dish is highly versatile – you can swap in different veggies, add protein like chicken or shrimp, or use brown rice for added nutrition. Leftovers store well in the fridge for up to 4 days.
