Ingredients
– 2 cups all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 2 ounces cream cheese, softened
– 1/4 cup powdered sugar, for dusting
Instructions
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
3. In a large bowl, beat the butter and granulated sugar together until light and fluffy, about 2-3 minutes.
4. Add the egg and vanilla extract, and beat until well combined.
5. Add the cream cheese and beat until fully incorporated.
6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be thick.
7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
8. Bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft.
9. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
10. Dust the cooled cookies with powdered sugar before serving.
Notes
For a more intense blue color, you can add a few drops of blue food coloring to the dough. Store the cookies in an airtight container at room temperature for up to 5 days.
