Ingredients

– 1 1/2 cups blue cornmeal

– 1 cup all-purpose flour

– 2 teaspoons baking powder

– 1/2 teaspoon baking soda

– 1/2 teaspoon salt

– 1 tablespoon granulated sugar

– 1 1/4 cups milk

– 2 large eggs

– 4 tablespoons unsalted butter, melted

– 1 cup crumbled chorizo sausage


Instructions

1. In a large bowl, whisk together the blue cornmeal, all-purpose flour, baking powder, baking soda, salt, and sugar.

2. In a separate bowl, beat the milk and eggs together until well combined.

3. Slowly pour the milk mixture into the dry ingredients, whisking constantly until the batter is smooth and lump-free.

4. Stir in the melted butter and crumbled chorizo.

5. Preheat a waffle iron and lightly grease it. Scoop the batter onto the preheated waffle iron and cook until golden brown and crispy, about 5-7 minutes.
