Ingredients

– 1 tablespoon olive oil

– 1 medium onion, diced

– 3 cloves garlic, minced

– 1 pound smoked sausage, sliced

– 1 (15 oz) can black beans, drained and rinsed

– 1 cup long-grain white rice

– 2 cups low-sodium chicken or vegetable broth

– 1 teaspoon ground cumin

– 1/2 teaspoon dried oregano

– 1/4 teaspoon cayenne pepper (optional)

– Salt and black pepper to taste

– Chopped fresh cilantro, for garnish

– Lime wedges, for serving


Instructions

1. – Heat the olive oil in a large skillet over medium heat. Add the onion and sauté for 5 minutes until softened.

2. – Add the garlic and sausage to the skillet and cook for 2-3 minutes, stirring occasionally, until the sausage is lightly browned.

3. – Stir in the black beans, rice, broth, cumin, oregano, and cayenne (if using). Season with salt and black pepper to taste.

4. – Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.

5. – Remove from heat and let stand, covered, for 5 minutes.

6. – Fluff the rice and beans with a fork, then serve hot, garnished with chopped cilantro and accompanied by lime wedges.

Notes

For a creamier texture, you can mash a portion of the black beans before adding them to the skillet. You can also use different types of sausage, such as chorizo or Italian sausage, to change up the flavor profile.
