Ingredients

– 4 cups of water

– 1 cup of white corn flour (masa harina)

– 4 cups of milk

– 1/2 cup of white sugar

– 1 cinnamon stick

– 1 star anise

– 1 vanilla bean, split lengthwise


Instructions

1. 1. In a large saucepan, bring the 4 cups of water to a boil.

2. 2. Whisk in the corn flour, making sure to incorporate it fully and prevent any lumps.

3. 3. Reduce the heat to low and let the mixture simmer, stirring frequently, for 15-20 minutes until it thickens to your desired consistency.

4. 4. Add the milk, sugar, cinnamon stick, star anise, and vanilla bean. Stir to combine.

5. 5. Continue simmering for an additional 5-10 minutes, stirring occasionally, until the flavors have melded and the atole has reached your preferred thickness.

6. 6. Remove the cinnamon stick, star anise, and vanilla bean before serving.

7. 7. Ladle the warm atole into mugs or bowls and enjoy!

Notes

For a thinner consistency, add more milk. For a thicker atole, let it simmer for a longer time. You can also adjust the sweetness to your taste by adding more or less sugar.
