Ingredients
– 3 pounds beef chuck roast, cut into 2-inch cubes
– 1 white onion, diced
– 6 garlic cloves, minced
– 3 ancho chili peppers, seeded and chopped
– 2 chipotle chili peppers in adobo sauce, chopped
– 2 tablespoons ground cumin
– 2 tablespoons dried oregano
– 2 teaspoons smoked paprika
– 1 teaspoon ground cinnamon
– 1 teaspoon ground cloves
– 1 teaspoon ground black pepper
– 4 cups beef broth
– 2 bay leaves
– 24 corn tortillas
– 2 cups shredded Oaxaca or Monterey Jack cheese
– Chopped cilantro, diced onion, and lime wedges for serving
Instructions
1. In a large Dutch oven or heavy-bottomed pot, combine the beef, onion, garlic, ancho chili peppers, chipotle peppers, cumin, oregano, paprika, cinnamon, cloves, and black pepper. Pour in the beef broth and add the bay leaves.
2. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 2-3 hours, or until the beef is very tender and easily shreds with a fork.
3. Remove the beef from the pot and shred it using two forks. Discard the bay leaves.
4. Heat a large skillet over medium-high heat. Dip the corn tortillas one at a time into the hot consome broth, then fry them in the skillet for 30-60 seconds per side until crispy.
5. To assemble the tacos, place a generous amount of shredded beef in the center of each fried tortilla. Top with shredded cheese, chopped cilantro, and diced onion.
6. Serve the tacos immediately, with the remaining consome broth on the side for dipping.
Notes
For a more intense flavor, you can broil the tacos for a minute or two after assembling to melt the cheese. You can also use the consome broth to dip the tacos in for an extra layer of deliciousness.
