Description

Enjoy a quick and delicious Bang Bang Chicken Bowl with crispy fried chicken, creamy and spicy sauce, and fresh crunchy veggies. This 30-minute meal is perfect for a weeknight dinner or easy meal prep.


Ingredients

– 1 pound chicken breasts, cut into 1-inch pieces

– 1 cup all-purpose flour

– 2 eggs, beaten

– 1 cup panko breadcrumbs

– 1/2 head cabbage, shredded

– 2 carrots, julienned

– 3 green onions, sliced

– 1/2 cup mayonnaise

– 2 tablespoons sriracha

– 2 tablespoons honey

– 1 tablespoon rice vinegar

– Salt and pepper to taste

– 4 cups cooked white rice


Instructions

1. In a shallow bowl, combine the flour. In a second shallow bowl, beat the eggs. In a third shallow bowl, place the panko breadcrumbs.

2. Dredge the chicken pieces in the flour, dip in the egg, and then coat in the panko breadcrumbs, pressing to adhere.

3. In a large skillet, heat 1/2 inch of oil over medium-high heat. Fry the chicken in batches for 2-3 minutes per side until golden brown and crispy. Drain on a paper towel-lined plate.

4. In a small bowl, whisk together the mayonnaise, sriracha, honey, and rice vinegar. Season with salt and pepper.

5. In a large bowl, combine the shredded cabbage, julienned carrots, and sliced green onions.

6. Add the crispy fried chicken to the sauce and toss to coat.

7. Serve the Bang Bang Chicken over the vegetable slaw and cooked white rice. Drizzle with any remaining sauce.

Notes

For a milder sauce, start with 1 tablespoon of sriracha and adjust to taste. The chicken can also be baked instead of fried for a healthier option.
