– 1 ripe banana, mashed

– 1 cup instant vanilla pudding mix


Instructions

1. – Preheat oven to 350°F and line a baking sheet with parchment paper.

2. – In a large bowl, cream together the butter and sugar until light and fluffy.

3. – Beat in the eggs one at a time, then stir in the vanilla.

4. – In a separate bowl, whisk together the flour, baking powder, and salt.

5. – Gradually mix the dry ingredients into the wet ingredients until just combined.

6. – Fold in the mashed banana and vanilla pudding mix.

7. – Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

8. – Bake for 12-15 minutes, until the edges are lightly golden.
